PINE Restaurant’s Next Collaborative Dinner is Here

Why enjoy the creations of just one talented chef when you can have two? On April 11, Chef Justin Dain of PINE Restaurant
at The Hanover Inn at Dartmouth College
will be joined by Chef Rogan Lechthaler from The Downtown Grocery in Ludlow. This latest dinner of its type will celebrate all that is new and fresh in the spring, featuring these two chefs who believe in using fresh, local ingredients and dishes made completely in-house.
Chef Lechthaler started his career in 1999 at the Ritz Carlton in Boston before moving to Mistral, a see-and-be-seen restaurant in Boston’s South End. In 2004, he returned to the Green Mountain State for a job at Warren’s Relais and Châteaux Pitcher Inn. During this time, he began wooing his Mississippi-raised wife and later left for jobs in the South. He came back to Vermont in 2007, taking a Head Chef position at Stratton Mountain’s Verdé. Finally, in November of 2010, Rogan and his wife, Abby, bought The Downtown Grocery.
Guests at the Hanover Inn have enjoyed Chef Dain’s creations since 2010. In 2011, Chef Dain was invited to the renowned James Beard House in New York, where he prepared and presented a menu worthy of Beard himself that was sold out. In 2013, he opened PINE, an American restaurant with a farm to table philosophy that utilizes the bounty of ingredients available in and around New England.
The April 11 menu features Roasted Mackerel with a Newfoundland Beer Vinaigrette, Tuna Carpaccio and Foie Gras Mousse, and Local Quail Brodo (an Italian-style broth.) The next course will be a Flash-Grilled Veal Steak served with broccoli and thyme puree, broccolini, freekeh, and tiny onion and bacon hash. Dessert features a Sichuan Peppercorn Ice Cream Sandwich with strawberry and rhubarb relish and pistachios.
